  • 1 cup white chocolate chips
  • ¼ cup unsalted butter
  • 3 tablespoons heavy whipping cream
  • ½ teaspoon strawberry extract
  • ¼ teaspoon vanilla extract
  • 1 drop pink food coloring (optional)
  • ¼ cup powdered sugar (for rolling)


Instructions

  1. Place white chocolate chips in a heatproof bowl.
  2. In a small saucepan, melt butter and stir in heavy cream. Bring to a gentle simmer (do not boil).
  3. Pour hot mixture over the white chocolate chips and let sit for 1–2 minutes.
  4. Add strawberry extract, vanilla extract, and food coloring. Whisk until smooth and glossy.
  5. If needed, microwave for 15-second bursts to melt remaining chocolate.
  6. Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour, until firm.
  7. Scoop 1 to 1½ tablespoons of the mixture and roll into balls with your hands.
  8. Roll each ball in powdered sugar to coat.
  9. Chill again for 30 minutes to 1 hour before serving.

Notes

Use high-quality white chocolate for best results. If the mixture is too soft to roll, chill longer. Try rolling in coconut, freeze-dried strawberries, or sprinkles for variety. Store truffles in the fridge for up to 7 days or freeze for 1 month.
