- 1 cup white chocolate chips
- ¼ cup unsalted butter
- 3 tablespoons heavy whipping cream
- ½ teaspoon strawberry extract
- ¼ teaspoon vanilla extract
- 1 drop pink food coloring (optional)
- ¼ cup powdered sugar (for rolling)
Instructions
- Place white chocolate chips in a heatproof bowl.
- In a small saucepan, melt butter and stir in heavy cream. Bring to a gentle simmer (do not boil).
- Pour hot mixture over the white chocolate chips and let sit for 1–2 minutes.
- Add strawberry extract, vanilla extract, and food coloring. Whisk until smooth and glossy.
- If needed, microwave for 15-second bursts to melt remaining chocolate.
- Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour, until firm.
- Scoop 1 to 1½ tablespoons of the mixture and roll into balls with your hands.
- Roll each ball in powdered sugar to coat.
- Chill again for 30 minutes to 1 hour before serving.
Notes
Use high-quality white chocolate for best results. If the mixture is too soft to roll, chill longer. Try rolling in coconut, freeze-dried strawberries, or sprinkles for variety. Store truffles in the fridge for up to 7 days or freeze for 1 month.
