Description

Sweet, blistered cherry tomatoes roasted in a tangy balsamic glaze — a family favorite that’s simple, quick, and full of flavor.


Ingredients

  • 2 cups cherry or grape tomatoes
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tsp brown sugar (optional)
  • 1 clove garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • Fresh basil or parsley for garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place tomatoes on a parchment-lined baking sheet.
  3. In a small bowl, mix balsamic vinegar, olive oil, brown sugar, garlic, salt, and pepper.
  4. Pour mixture over tomatoes and toss gently to coat.
  5. Spread evenly and roast for 20–25 minutes, until skins blister and juices caramelize.
  6. Remove from oven and garnish with fresh herbs. Serve warm.

Notes

Try this recipe in the air fryer at 375°F (190°C) for 10–12 minutes. Add cheese, onions, or serve with mozzarella and basil for a Caprese twist.
