- 2 cups cherry or grape tomatoes
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1 tsp brown sugar (optional)
- 1 clove garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
- Fresh basil or parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Place tomatoes on a parchment-lined baking sheet.
- In a small bowl, mix balsamic vinegar, olive oil, brown sugar, garlic, salt, and pepper.
- Pour mixture over tomatoes and toss gently to coat.
- Spread evenly and roast for 20–25 minutes, until skins blister and juices caramelize.
- Remove from oven and garnish with fresh herbs. Serve warm.
Notes
Try this recipe in the air fryer at 375°F (190°C) for 10–12 minutes. Add cheese, onions, or serve with mozzarella and basil for a Caprese twist.
