This Pumpkin Baked Brie is buttery, gooey, and shaped like an adorable pumpkin! A cozy, crowd-pleasing appetizer made with puff pastry, brie, and apple butter — perfect for fall gatherings.

- 1 puff pastry sheet, thawed
- 1 (8 oz) wheel of brie cheese
- ⅓ cup apple butter (or jam of choice)
- 1 egg white, beaten
- 1 pretzel stick (for pumpkin stem)
- 2 fresh sage leaves (for garnish)
- Crackers or apple slices, for serving
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Place thawed puff pastry on the sheet and spread apple butter in the center, about the size of the brie wheel.
- Place brie on top of apple butter.
- Wrap puff pastry up and around the brie, sealing at the top. Trim excess dough if needed.
- Use kitchen twine to wrap around the pastry 4–6 times, tying gently to form pumpkin ridges.
- Flip the wrapped brie over, smooth side up. Brush with egg white.
- Bake for 20–25 minutes, until golden and puffed.
- Let cool 3–5 minutes, then remove twine, insert pretzel stick, and top with sage leaves.
- Serve warm with crackers or apple slices.
Notes
Use a mild, double-cream brie for best results. Try fig or cranberry jam for a fun variation. To prep ahead, assemble and refrigerate, then bake fresh before serving. Avoid microwaving leftovers to keep pastry crisp.
