Description
Kombucha tea is a fizzy, fermented tea drink made at home with a living culture called a scoby. It’s known for gut support, gentle energy, and a light tangy flavor.
Ingredients

- 4 cups water
- 2 tablespoons loose black or green tea (or 4 tea bags)
- 1/2 cup white sugar
- 1 scoby (symbiotic culture of bacteria and yeast)
- 1 cup starter kombucha (from previous batch or store-bought, unflavored)
Instructions
- Bring 4 cups of water to a boil. Remove from heat and steep the tea for 5-10 minutes.
- Stir in the sugar until fully dissolved. Let the sweet tea cool to room temperature.
- Pour the cooled tea into a clean glass jar.
- Add the starter kombucha and gently place the scoby on top.
- Cover the jar with a clean cloth or coffee filter secured with a rubber band.
- Let ferment at room temperature, out of direct sunlight, for 7-10 days.
- Taste the kombucha after 7 days. If it’s tangy enough for your liking, remove the scoby and bottle the tea.
- Refrigerate bottled kombucha and enjoy chilled. Save a cup of kombucha and the scoby for your next batch.
Notes
Keep your jar and tools clean to avoid contamination. Start with short fermentation times until you find your preferred flavor. Don’t use metal containers or utensils during fermentation.
