Description
A healthy, make-ahead breakfast sandwich packed with protein, veggies, and melty cheese. Perfect for busy mornings and picky eaters alike!
Ingredients

- Cooking spray or 2 teaspoons olive oil
- ½ white onion – diced
- 5 oz fresh spinach
- 6 large eggs
- 4 egg whites
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ¼ cup milk
- ¼ cup shredded cheddar cheese
- 1 cup cherry tomatoes, sliced
- 6 English muffins – sourdough or whole wheat
- 6 cheddar cheese slices
Instructions
- Heat a skillet over medium-low heat and spray with cooking spray or use olive oil.
- Cook diced onions for 2–3 minutes until soft and translucent.
- Add spinach and cook until wilted, then remove from heat and cool.
- In a mixing bowl, whisk eggs, egg whites, milk, salt, and pepper.
- Stir in shredded cheddar, sliced tomatoes, and the cooled spinach-onion mix.
- Preheat oven to 375°F and spray a 9×13 baking pan.
- Pour in egg mixture and bake 25–30 minutes until set.
- Let cool slightly, then cut into rounds or squares.
- Slice English muffins and toast in the oven for 10 minutes.
- During last 3 minutes, add cheddar slices to the bottom halves.
- Place egg round on top of cheese, then top with muffin half to assemble sandwich.
Notes
Make ahead and freeze for easy weekday breakfasts. Add turkey sausage or swap for a burrito wrap if you like variety!
