Description

This Grilled Monterey Chicken Recipe is smoky, cheesy, and loaded with BBQ flavor and bacon. A true comfort food classic that’s easy enough for a busy weeknight and tasty enough for a cookout favorite.


Ingredients

  • 46 boneless chicken breasts, pounded evenly
  • ½ cup BBQ sauce
  • 46 slices Crystal Farms® Marble Jack Cheese (or Monterey Jack)
  • 46 slices cooked bacon, crumbled
  • Optional: olive oil & vinegar dressing, soy sauce, Worcestershire sauce (for marinade)
  • Optional: seasoned salt (if not marinating)


Instructions

  1. Preheat your grill to high heat.
  2. Place chicken breasts in a gallon-size Ziploc bag and pound to ½ inch thickness.
  3. Optional: Marinate chicken in olive oil, soy sauce, and Worcestershire for at least 30 minutes. If short on time, season with seasoned salt.
  4. Grill chicken with the lid closed for about 6 minutes. Flip and cook another 4–6 minutes, until internal temp reaches 165°F.
  5. Turn grill to low heat. Spread BBQ sauce over each piece of chicken.
  6. Top each with a slice of cheese and sprinkle with crumbled bacon.
  7. Close grill lid for 1–2 minutes until cheese melts. Serve hot.

Notes

Pound the chicken evenly for better cooking. Use a thermometer to avoid overcooking. Monterey Jack, Marble Jack, cheddar, or pepper jack all work great. Leftovers are perfect for sandwiches or wraps.
