Description
This Grilled Monterey Chicken Recipe is smoky, cheesy, and loaded with BBQ flavor and bacon. A true comfort food classic that’s easy enough for a busy weeknight and tasty enough for a cookout favorite.

- 4–6 boneless chicken breasts, pounded evenly
- ½ cup BBQ sauce
- 4–6 slices Crystal Farms® Marble Jack Cheese (or Monterey Jack)
- 4–6 slices cooked bacon, crumbled
- Optional: olive oil & vinegar dressing, soy sauce, Worcestershire sauce (for marinade)
- Optional: seasoned salt (if not marinating)
Instructions
- Preheat your grill to high heat.
- Place chicken breasts in a gallon-size Ziploc bag and pound to ½ inch thickness.
- Optional: Marinate chicken in olive oil, soy sauce, and Worcestershire for at least 30 minutes. If short on time, season with seasoned salt.
- Grill chicken with the lid closed for about 6 minutes. Flip and cook another 4–6 minutes, until internal temp reaches 165°F.
- Turn grill to low heat. Spread BBQ sauce over each piece of chicken.
- Top each with a slice of cheese and sprinkle with crumbled bacon.
- Close grill lid for 1–2 minutes until cheese melts. Serve hot.
Notes
Pound the chicken evenly for better cooking. Use a thermometer to avoid overcooking. Monterey Jack, Marble Jack, cheddar, or pepper jack all work great. Leftovers are perfect for sandwiches or wraps.
