A spooky, fun, and hearty Halloween lasagna with ghost-shaped mozzarella and hidden greens—perfect for a festive family dinner before trick-or-treating.

- 24 lasagna noodles
- 4 cups cooked chicken, shredded
- 4 cups spinach, chopped
- 4 cups ricotta cheese
- 4 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- A few black olives (sliced into rings for “eyes”)
- 6 cups marinara sauce
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions. Drain and set aside.
- In a medium bowl, stir together ricotta, chopped spinach, salt, and pepper.
- In a 9×13-inch baking dish, spread a thin layer of marinara sauce. Layer noodles, ricotta-spinach mixture, shredded chicken, mozzarella, and sauce. Repeat until ingredients are used, ending with sauce and mozzarella.
- Cut mozzarella slices into ghost shapes and place them on top. Add olive slices for eyes.
- Sprinkle Parmesan cheese on top. Cover with foil and bake at 375°F (190°C) for 30 minutes. Remove foil and bake another 10–15 minutes until golden and bubbling.
Notes
Use a ghost-shaped cookie cutter for the mozzarella or freehand with a knife. Kids love helping cut out the ghosts and adding olive eyes.
