Ghostly Lasagna

Description

A spooky, fun, and hearty Halloween lasagna with ghost-shaped mozzarella and hidden greens—perfect for a festive family dinner before trick-or-treating.


Ingredients

  • 24 lasagna noodles
  • 4 cups cooked chicken, shredded
  • 4 cups spinach, chopped
  • 4 cups ricotta cheese
  • 4 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • A few black olives (sliced into rings for “eyes”)
  • 6 cups marinara sauce
  • Salt and pepper to taste


Instructions

  1. Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions. Drain and set aside.
  2. In a medium bowl, stir together ricotta, chopped spinach, salt, and pepper.
  3. In a 9×13-inch baking dish, spread a thin layer of marinara sauce. Layer noodles, ricotta-spinach mixture, shredded chicken, mozzarella, and sauce. Repeat until ingredients are used, ending with sauce and mozzarella.
  4. Cut mozzarella slices into ghost shapes and place them on top. Add olive slices for eyes.
  5. Sprinkle Parmesan cheese on top. Cover with foil and bake at 375°F (190°C) for 30 minutes. Remove foil and bake another 10–15 minutes until golden and bubbling.

Notes

Use a ghost-shaped cookie cutter for the mozzarella or freehand with a knife. Kids love helping cut out the ghosts and adding olive eyes.
