- 1½ to 2 pounds chicken breasts or thighs (boneless, skinless)
- 3 tablespoons olive oil
- 3 to 4 cloves minced garlic
- 2 to 3 tablespoons fresh herbs (rosemary, parsley, thyme)
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Optional: pinch of chili flakes, 1 spoon of Greek yogurt or Dijon mustard
Instructions
- In a bowl or zip bag, combine olive oil, garlic, herbs, lemon juice, salt, and pepper.
- Add chicken and mix until well coated. Marinate in the fridge for at least 30 minutes.
- Choose your cooking method:
– Oven: Preheat to 400°F, bake 20–25 minutes until internal temp reaches 165°F.
– Grill: Medium-high heat, cook 5–6 minutes per side, brush with marinade.
– Pan: Medium heat, sear 6–7 minutes per side until golden and cooked through. - Let chicken rest a few minutes before slicing to keep it juicy.
- For creamy version: after cooking, add cream or butter to pan and simmer into sauce. Return chicken to coat.
