Description

Ingredients

  • to 2 pounds chicken breasts or thighs (boneless, skinless)
  • 3 tablespoons olive oil
  • 3 to 4 cloves minced garlic
  • 2 to 3 tablespoons fresh herbs (rosemary, parsley, thyme)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: pinch of chili flakes, 1 spoon of Greek yogurt or Dijon mustard


Instructions

  1. In a bowl or zip bag, combine olive oil, garlic, herbs, lemon juice, salt, and pepper.
  2. Add chicken and mix until well coated. Marinate in the fridge for at least 30 minutes.
  3. Choose your cooking method:
    – Oven: Preheat to 400°F, bake 20–25 minutes until internal temp reaches 165°F.
    – Grill: Medium-high heat, cook 5–6 minutes per side, brush with marinade.
    – Pan: Medium heat, sear 6–7 minutes per side until golden and cooked through.
  4. Let chicken rest a few minutes before slicing to keep it juicy.
  5. For creamy version: after cooking, add cream or butter to pan and simmer into sauce. Return chicken to coat.
