These Crock Pot Scalloped Potatoes are creamy, cheesy, and the ultimate slow cooker comfort food. With tender Yukon gold potatoes, a rich sauce, and easy prep, they’re perfect for holidays or cozy family dinners — no oven required!

- 3 lbs Yukon gold potatoes (about 6 medium), sliced 1/8” thick
- 1 onion, thinly sliced
- 3 cups whole milk
- 3 Tbsp cornstarch (heaping)
- 2 Tbsp prepared yellow mustard
- 2½ tsp salt
- ¾ tsp black pepper
- 8 oz white cheddar cheese, freshly grated
Instructions
- Spray the inside of your slow cooker with nonstick spray or rub with butter for extra flavor.
- Layer ⅓ of the onions, potatoes, and cheese. Repeat layers twice, ending with cheese on top.
- In a large measuring cup, whisk together milk, cornstarch, mustard, salt, and pepper until smooth.
- Pour the milk mixture evenly over all layers in the crock pot.
- Cover and cook on HIGH for 3–4 hours or LOW for 6–7 hours, until potatoes are fork-tender and sauce is bubbly.
- Let rest for 20 minutes before serving to allow the sauce to thicken.
Notes
Use a mandoline for even slices. Add ham, bacon, or herbs for a twist. Swap some of the cheddar with Gruyère for deeper flavor. For a kick, stir in cayenne or sliced jalapeños. Perfect make-ahead side dish for holidays.
