  • 1 cup milk (plus more if needed)
  • 1 tablespoon vegetable oil
  • 1 large egg, beaten

Cinnamon Filling:

  • ⅓ cup butter, melted
  • ¾ cup packed light brown sugar
  • 1 tablespoon ground cinnamon

Cream Cheese Glaze:

  • 4 tablespoons butter
  • 2 ounces cream cheese
  • 1¼ cups powdered sugar
  • 1 teaspoon vanilla extract


Instructions

  1. Make the Cinnamon Filling: Stir together melted butter, brown sugar, and cinnamon until smooth. Pour into a zip-top bag, snip one corner, and set aside for 10–15 minutes to thicken.
  2. Prepare the Pancake Batter: In a bowl, whisk flour, baking powder, and salt. Stir in milk, oil, and egg until just combined. (Or use boxed mix.)
  3. Make the Cream Cheese Glaze: Microwave butter and cream cheese until melted. Whisk in powdered sugar and vanilla until smooth. Set aside.
  4. Cook the Pancakes: Heat skillet or griddle over low heat. Spray with non-stick spray. Pour ½ cup of pancake batter, then pipe a spiral of cinnamon filling on top. Flip when bubbles form and cook 1–2 minutes more. Repeat.
  5. Serve: Stack pancakes, drizzle with warm cream cheese glaze, and enjoy immediately.

Notes

Cook low and slow to prevent the cinnamon sugar from burning. Let the swirl thicken before piping. Pancakes can be made ahead and reheated in a toaster. Store glaze separately in the fridge and rewarm before serving.
