Description

This cast iron beef roast is a rich, juicy, and tender roast with a garlic herb crust, seared to perfection and slow-roasted for deep flavor and a melt-in-your-mouth texture.


Ingredients

  • Beef chuck roast or rump roast
  • Salt
  • Black pepper
  • Olive oil
  • Butter
  • Garlic cloves
  • Fresh rosemary
  • Fresh thyme


Instructions

  1. Let the beef roast sit at room temperature for 30–45 minutes.
  2. Heat a cast iron skillet over high heat until very hot.
  3. Add oil and sear the roast on all sides until deeply browned.
  4. Reduce heat and add butter, garlic, rosemary, and thyme.
  5. Baste the melted herb butter over the roast.
  6. Transfer the skillet to a preheated oven at 300°F (150°C).
  7. Roast slowly until tender and cooked to desired doneness.
  8. Remove from oven and let rest for 15–20 minutes before slicing.

Notes

Use a heavy cast iron skillet for best heat retention. Always rest the roast before slicing to keep it juicy. Pair with roasted vegetables or potatoes for a complete meal.
