Description
This cast iron beef roast is a rich, juicy, and tender roast with a garlic herb crust, seared to perfection and slow-roasted for deep flavor and a melt-in-your-mouth texture.
Ingredients
- Beef chuck roast or rump roast
- Salt
- Black pepper
- Olive oil
- Butter
- Garlic cloves
- Fresh rosemary
- Fresh thyme
Instructions
- Let the beef roast sit at room temperature for 30–45 minutes.
- Heat a cast iron skillet over high heat until very hot.
- Add oil and sear the roast on all sides until deeply browned.
- Reduce heat and add butter, garlic, rosemary, and thyme.
- Baste the melted herb butter over the roast.
- Transfer the skillet to a preheated oven at 300°F (150°C).
- Roast slowly until tender and cooked to desired doneness.
- Remove from oven and let rest for 15–20 minutes before slicing.
Notes
Use a heavy cast iron skillet for best heat retention. Always rest the roast before slicing to keep it juicy. Pair with roasted vegetables or potatoes for a complete meal.
